Let’s Tango, or in this case Let’s Mango

They say travel is food for the soul. With that in mind we share our favourite summer recipes that will not only indulge your taste buds but nourish the soul.  

Our Starter of choice:

Prawns on a bed of fresh baby spinach with a spicy mango relish

Spicy mango relish

What you need:
•    1-2 freshly diced mangos
•    1 freshly diced shallot
•    1-2 fresh chillies
•    3 crushed cloves of garlic
•    2 tablespoons of lime or lemon juice
•    2 tablespoons of peri-peri sauce
•    1 tablespoon of fresh grated ginger

How to prepare:
•    Place all ingredients in a large bowl
•    Stir until all ingredients are perfectly mixed
•    Best to prepare this the day before as it will help to marinate and enhance the flavour

Prawns and baby spinach

What you need:
•    35gm of butter
•    12 de-veined and peeled king prawns
•    3 crushed cloves of garlic
•    1 cup of baby spinach
•    1 freshly diced shallot

How to prepare:
•    Melt the butter in a frying pan
•    Add the crushed garlic and shallots
•    When garlic and shallots are soft, add the prawns
•    Fry over a high heat for up to 4 minutes, until prawns are pink, but don’t overcook
•    Remove prawns from pan and add the baby spinach
•    Cook the baby spinach in a little bit of water until soft
•    Drain the water
•    Place the cooked spinach on a plate with the prawns neatly on top
•    Pour the spicy mango relish on top of your prawns
•    And Enjoy!

Our choice of Main course

Salmon with Mango Salsa

Mango Salsa

What you need:
•    1-2 freshly diced mangos
•    1 freshly diced shallot
•    A dash of chilli flakes
•    2 tablespoons of lime or lemon juice
•    Teaspoon of sugar

How to prepare:
•    Combine all ingredients into a bowl
•    Season with chilli flakes and sugar to your liking
•    Make sure to leave ample time for all the ingredients to start doing their magic, best to prepare the night before


What you need:
•    2 Fillets of fresh salmon
•    3 Tablespoons of olive oil
•    Pinch of salt
•    Pinch of pepper
•    Teaspoon of dried parsley
•    3 crushed cloves of garlic
•    Lemon wedges for serving

How to prepare:
•    Heat a non-stick frying pan with the olive oil
•    Place the salmon, skin-side down, in the pan
•    Season with salt, pepper, dried parsley and chopped garlic to your liking
•    After 5-6 minutes turn the salmon and season again
•    After 5-6 minutes take the salmon off the heat
•    Place your perfectly cooked salmon on a plate
•    Scoop your delicious mango salsa over the top
•    Enjoy each mouthful!

And finally, what is a meal without a delicious Dessert:

Fruity mango popsicles 

What you need:
•    1-2 freshly diced mangos
•    Your choice of fruit juice (granadilla, orange or apple)
•    Whole berries of your choice (blueberries, strawberries or raspberries) 
•    150ml cream
•    A popsicle tray

How to prepare:
•    Place the mangos in a food processor
•    Pour in your choice of fruit juice and cream
•    When completely mixed pour into the popsicle tray
•    Place your choice of whole berries into the popsicle tray
•    Place in freezer until the mixture has solidified, approximately 4 hours
•    Turn upside down, out of popsicle holder and enjoy!

And one for the grownups:  

Mango Daiquiris

What you need:
•    Freshly diced mangos
•    Granadilla juice/pulp
•    Orange juice
•    White rum (keep pouring!)
•    Ice
•    Fresh mint and cherries or strawberries for a splash of decorative colour

Use your discretion regarding the quantity of the ingredients for the desired quantity

How to prepare:
•    Place the mangos in a food processor
•    While pulsing, gradually add the granadilla and orange juice/pulp until completely blended
•    Add the white rum, to your liking obviously, and enough ice so that the food processor is almost full
•    Blend all the ingredients together until you get a lovely mushy consistency
•    Poor the content into your choice of glasses and finish off with a sprig of fresh mint and cherries/strawberries on top
